So I was reading the tinkerer forums the other day and someone made a post about instanced zones for harvesting. I have been hopping in and out of The Cove of Decay in TS so I could harvest my T4 loams. This post I read though also mentioned that there are similar instances for T2 and T3 (boy I wish I had seen that post earlier!) Here's what was suggested:
T1 - make an alt and harvest noobie island T2 - Vale of the Shattering - (In Antonica, North of Stormhold) T3 - Zarvonn's Tower instance (In Commonlands at Zarvon's Tower) T4- Cove of Decay (near Southern end of Thundering Steppes)
I'm not sure about Zarvonn's tower, but the Vale of the Shattering and Cove of Decay do require access, so you need to do the quest. It's totally worth it though as it's way easier to just zone in and out and back in for a respawn instead of running all over the zone.

I've spent lots of time in CoD harvestign foodstuffs when I was leveling up Terwin's provisioning. It's so nice to be able to run in, harvest only what you need, and just pop out and back in to find everything respawned!
Though remember that the mobs in there are mid 30s heroics, so be sure to be high enough level to grey them out or you're in for some interesting fights. ;D
